Noble Late Harvest

Noble Late Harvest wines are made from grapes that have been infected by a fungus called Botrytis. These wines are sweeter because the noble rot (botrytis) makes tiny holes in the skin of the grape that causes water to evaporate and sugar, acid and flavour to become more concentrated. Noble Late Harvest wines tend to have flavours such as honey, ginger and saffron to the wines.
